The colour is medium straw. On the nose acacia, Golden apple, pine, mint, and elderflower. In the mouth this wine displays a vibrant acidity. The aftertaste is very long but a bit bitter.
This white wine is made by Zýmē with 60% Rondinella Bianca, 15% Gold Traminer, 15% Kerner, 10% Incrocio Manzoni grapes.
Rondinella Bianca is a rare white mutation of the historic Rondinella red grape, traditionally used in Valpolicella red blends. In its white form, it offers freshness, subtle floral notes, and a refined structure. It forms the backbone of the wine, contributing elegance and a sense of place, and it gives the wine its name: “From Black to White”.
Gold Traminer is usually known as Gewürztraminer, an aromatic variety that brings expressive floral perfume, gentle spice, and exotic nuance. It enhances the wine’s aromatic complexity without overwhelming its balance.
Kerner is a crossing between Riesling and Schiava and contributes vibrant acidity, precision, and delicate fruit tones such as apple and citrus. It provides energy and length to the palate.
Incrocio Manzoni is a uniquely Italian crossing created by Professor Luigi Manzoni, combining Riesling and Pinot Bianco. It adds finesse, aromatic clarity, and a refined mineral dimension, reinforcing the wine’s harmony.
